Basic Whole Wheat Loaf

This is my basic whole wheat loaf. I make it from time to time to compare to previous loaves.

I rolled out the dough, shaped it, and set it to proof on the cookie sheet.  I forgot the parchment, but it came off the cookie sheet reasonably well anyway.
